INGREDIENTS
2 kg plain flour
1 bag yeast (12g)
1 Tbsp sugar
1 cup warm water
1 Tsp salt
1/4 cup olive oil
2-3 cups warm water
INSTRUCTIONS
To make the dough, mix the yeast, sugar and warm water in a small non-metallic bowl & set aside. In about 5-10 minutes the mixture will become frothy as the yeast activates.
To a large bowl, add the flour, salt, yeast mixture and olive oil. Mix well until a dough starts to form. At this point- the dough will be very rough.
Gradually add the water, mixing well to form a soft dough.
Turn the dough out on to a floured surface and knead for about 5 minutes, until smooth and elastic.
Transfer to a clean bowl, cover with a damp tea towel and leave to rise for about 1½ hours, or until doubled in size.
After an hour or so, remove the dough and knead again until smooth. Divide the dough into eight portions & roll each portion into a ball.
Cover with a damp tea towel & set aside for 30 minutes to 1 hour until risen again.
When you're ready to use the dough- preheat your oven to the highest setting, roll out the dough balls & top with your favourite toppings.
