Fattoush (Lebanese bread Salad)

A classic Lebanese side dish, filled with colourful vegetables, a zingy vinaigrette & dressed with fresh pita bread & pomegranate.

 
 

A perfect accompaniment to any main dish.

 

INGREDIENTS

  • 8-10 Romaine lettuce leaves (chopped as desired)

  • 1/2 onion / 2-3 spring onion (finely chopped)

  • Small wedge of red cabbage (finely chopped)

  • 6 radishes (chopped as desired)

  • 1/2 large cucumber (chopped as desired)

  • Few sprigs of parsley

  • 8-10 fresh mint leaves

  • 2 tomatoes (de-seeded & juice removed)

  • Arabic pita bread & a little olive oil to crisp.

  • Pomegranate seeds to garnish

DRESSING

  • 4 Tbsp olive oil

  • 3 Tbsp pomegranate molasses

  • 2 Tbsp vinegar

  • 1 Lemon

  • 2 Garlic Cloves

  • Pinch of salt

  • 1/4 tsp sumac

  • 1/2 Tsp died mint

  • 1 Tsp sugar

INSTRUCTIONS

  • Cut up the Arabic pita bread into squares & place on a baking tray.

  • Drizzle with a little olive oil & a tiny pinch of salt.

  • Toast the pita bread in the oven at gas mark 4 for about 5-10 minutes, or just until golden. Remove from the baking tray and reserve for later.

Traditionally the bread is deep fried whole & crumbled over the salad just before serving- so it's up to you to decide how you want your 'croutons'.

  • In a large strainer, combine the chopped lettuce, onion, cabbage, radish, tomatoes, cucumber, parsley & mint.

The strainer just ensures all excess liquid is removed so the veggies can soak up the delicious dressing.

  • To make the dressing, place all the ingredients in a jar & shake!

I like to use a jar because you can close the lid and shake the jar vigorously to emulsify the oil- making an even creamier vinaigrette.

  • Dress the salad with the vinaigrette and toss lightly.

  • Just before serving, add the crunchy Arabic croutons & garnish with fresh pomegranate seeds.

RECIPE NOTES

  • Choose ripe, juicy tomatoes & use a sharp knife to slice them into cubes.

  • Olive oil plays a big roll in this dressing, so try and stick to an Extra virgin brand. You'll enrich the salad with a light, nutty flavour that adds body & character.

  • Jazz up your salad by adding Armenian string cheese- the salty string cheese takes this salad to a different dimension!
