Foul muddamas

A gorgeous mix of Fava beans & hummus, dressed in garlic, chilli, cumin, lemon and olive oil!

It's the good kind of naughty...

 

INGREDIENTS

  • 2 Tins (400g) Fava beans

  • 2 Tins (400g) Chickpeas

  • 1/2 cup water

DRESSING

  • 2 lemons squeezed

  • 1/4 cup olive oil

  • 2-3 garlic cloves crushed

  • 1/4 Tsp chilli powder or 1 green chilli

  • 1/2 Tsp cumin

  • Pinch of salt

GARNISH

  • Sliced radish

  • Cucumber

  • Finely chopped tomato

  • Finely chopped parsley

  • Fresh mint leaves

  • Finely chopped spring onion

  • and warm Arabic wraps

INSTRUCTIONS

  • Lightly rinse and strain the Fava beans & the chickpeas.

  • In a large saucepan, add the Fava beans, chickpeas and ½ cup water, gently warm over a medium heat.

  • When the beans come to a boil, use a potato masher to mash some of the beans together.

Don't mash everything! We want some whole beans in there too. The mashed beans will mix with the dressing to make it lusciously silky.

  • Keep the mixture on a low heat while you prepare the dressing.

  • In a medium sized bowl, add the crushed garlic, cumin, chilli, lemon & olive oil. Stir to combine & season with salt.

Taste the dressing& adjust to your liking. We generally add a little more chilli at this point, but its your call.

  • Pour the hot bean mixture into a serving bowl & stir in the dressing.

  • Mix well & serve hot.

In the individual bowls,top each plate with a good drizzle of olive oil, fresh parsley, mint, radish & tomatoes.

  • Serve with pita bread, sliced veggies and olives. Add a plate of homemade Labne to complete the Mezze.
