Heirloom Bruschetta

A modern take on the classic tomato bruschetta

 

INGREDIENTS

  • 1 cup mixed heirloom tomatoes

  • Pinch of salt & freshly ground black pepper

  • 1 small shallot

  • 2 Tsp Olive oil

  • 4 sun-dried tomatoes

  • 4 crotsini / sour dough/ multi-seed bread

  • handful of fresh basil

  • 1 Tbsp Balsamic glaze

  • A few mozzarella pearls

ASSEMBLY

  • Heat the bread on a griddle skillet until charred slightly. Set aside to cool.

  • Generously decorate with the heirloom tomatoes, shallots, basil, sun-dried tomato and the fresh mozzarella.

  • Add a few drops or drizzle the balsamic glaze & add final touch of salt and pepper.

  • Enjoy!

RECIPE NOTES

  • These are ridiculously addictive. They make a great side to any meal, particularly Italian.

  • The mozzarella can be substituted for Parmesan peals for a sharper taste.
