A modern take on the classic tomato bruschetta
INGREDIENTS
1 cup mixed heirloom tomatoes
Pinch of salt & freshly ground black pepper
1 small shallot
2 Tsp Olive oil
4 sun-dried tomatoes
4 crotsini / sour dough/ multi-seed bread
handful of fresh basil
1 Tbsp Balsamic glaze
A few mozzarella pearls
ASSEMBLY
Heat the bread on a griddle skillet until charred slightly. Set aside to cool.
Generously decorate with the heirloom tomatoes, shallots, basil, sun-dried tomato and the fresh mozzarella.
Add a few drops or drizzle the balsamic glaze & add final touch of salt and pepper.
Enjoy!
RECIPE NOTES
These are ridiculously addictive. They make a great side to any meal, particularly Italian.
The mozzarella can be substituted for Parmesan peals for a sharper taste.
