A beautiful, light & fresh heirloom tomato salad, with crumbled feta & a light olive oil dressing

INGREDIENTS

  • 4-5 Heirloom tomatoes sliced.

  • A handful of fresh basil

  • A handful of fresh cress

  • 1 Tbsp capers

  • 1/4 cup Feta cheese

  • 1/4 cup Greek olives

  • 8-10 Red gem lettuce leaves washed & dried

  • A pinch of sea salt & freshly ground black pepper

  • 2 Tbsp olive oil

The heirloom tomatoes have such a wonderful natural flavour, I didn't want to mask them with a heavy dressing. By drizzling a little olive oil, we enhance the natural flavours.

ASSEMBLY

  • On a large serving plate lay the red gem lettuce so the edges slightly overlap.

  • Add the colourful heirloom tomatoes and Greek olives- be creative with layout- its all about showing off those beautiful colours.

  • Sprinkle over the capers, feta, cress & fresh basil.

  • And lastly, drizzle the fresh olive oil & add a pinch of salt & freshly ground black pepper
