Khoshaf (Marinated dried fruit & Nuts)

During the holy month of Ramadan, my mom introduced me to Khoshaf- A wonderfully light dried fruit & nut salad, infused with raisins and apricots; poached in a fragrant syrup.

This is a very traditional Middle Eastern dessert, full of nutritional benefits & a great way to jazz up a brunch, afternoon snack, or even desert!

 

A unique and delicate combination of flavours

 

INGREDIENTS

  • 1/2 cup yellow raisins

  • 1/2 cup sultanas

  • 1/2 cup dried apricots

  • 1/2 cup dried figs

  • 1/2 cup almonds

  • 1/4 cup pine nuts

  • 1/2 cup walnut

  • 1/4 cup simple sugar syrup / 2 TBSP Sugar

  • 1 TBSP orange Blossom

Add any dried fruit you like (this is just the traditional recipe)

INSTRUCTIONS

  • Mix the nuts and fruits in a big bowl & rinse thoroughly.

  • Strain the mixture to remove any excess liquid.

  • Once strained, add the mixture to the serving bowl

  • Add either the syrup or the sugar & enough water to cover just over 1cm of the mixture.

  • Add the orange blossom, mix well & let the mixture poach over night.

If you find the dried fruit has soaked up all the water, add a little more.

GARNISH

  • 1/4 cup Pomegranate seeds

  • 1/4 cup Pistachio

  • 1/4 cup Pumpkin seeds

RECIPE NOTES

  • If you have brought raw almonds- you should boil them for about 5 minutes on a low heat to ease the skin off.

  • An easy way to remove Almond skin is by rubbing them with your fingertips against each other.

  • The mixture will last 1 week in fridge, in a sealed Tupperware box.

  • Serve chilled, with Feta or any preferred cheese, bread sticks, or even over porridge.
