Mama’s famous hummus

Over and over, I’ve been asked for my mama’s famous hummus recipe.

 
 

It is ridiculously good, vegan and heavenly.

 

Forget shop bought, get the ingredients and make it at home- it’s so easy!

You will never shop for pre-made hummus again.

 

INSTRUCTIONS

  • 400g Chickpeas (for this recipe we used cans)

  • 2 garlic cloves

  • 1/4 Tsp salt

  • 1.5-2 Lemons

  • 2 Tbsp olive oil

  • 1/4 cup cold water

  • 1/4 cup good quality Tahini

INSTRUCTIONS

  • Add chickpeas, minced garlic, Olive oil & a little cold water to a food processor.

  • Puree until you reach a smooth, creamy paste.

(Just wait.. it gets better!)

  • While processor is running add Tahini & salt and blend again, it will become creamier and creamier.

  • Finally, while the food processor is running, add the lemon juice.

Lemon juice reacts with the Tahini, making it very thick, so you may need to add a touch of water.

  • Blend for about 4 minutes or so... Blend the hummus until you reach desired consistency.

GARNISH

  • Spread generously, (it may be difficult to share- but resist the urge to lightly spread the hummus-

  • Garnish with whole chickpeas, radishes, fresh parsley- anything you desire.

(To get those typical three lines of spice on the edge- top tip- Dip a fork in a little plate of water, then into the spice jar & press it into the hummus on the edge- Looks so professional!)

RECIPE NOTES

  • Use quality tahini- When you buy a good quality tahini, you'll only need a little bit & it will last ages in the pantry.

  • Take your time...Let the food processor do its job.. Patience is a virtue, you'll thank me at the end when you're licking the last few drops of Hummus from your plate.

 

Always remember..

A little bit of something good is much better than a whole lotta' something average.
