Peanut butter Angel kisses

Makes 12

A classic treat(طربوش), recognised & loved from generation to generation.

 
 

INGREDIENTS

  • 3 Egg whites

  • 1 Cup caster sugar

  • 1 Tbsp unsalted butter, at room temperature

  • 1 Tsp Vanilla bean paste

  • 1 Tbsp smooth peanut butter

  • 400g Dark chocolate

  • 12 Rich tea biscuits

INSTRUCTIONS

  • Combine the egg whites with the vanilla & caster sugar heat proof bowl, whisk until combined.

  • Place the heatproof bowl over a double broiler (bain maire). Ensure the boiling water doesn't touch the bottom of the heatproof bowl.

  • Whisk until the mixture is smooth and thick, not grainy (around 3-4 minutes).

  • Remove from heat & whisk on high for 5-10 minutes until the meringue is smooth and cool to the touch.

  • Slowly add the softened butter & the flavourings of your choice. We halved the mixture, added peanut butter to one half and kept the other original vanilla.

  • Place the filling in a piping bag, with the nozzle of your choice.

ASSEMBLY

  • Prepare your biscuits on a baking tray, lined with parchment paper

  • Pipe a generous layer of the filling over the rich tea biscuit & set aside to cool in the fridge (1 hr).

  • Melt the chocolate in a double broiler. Set aside to cool slightly.

  • Once cooled, dip each biscuit, (filling first) into the chocolate to coat.

  • Serve chilled & enjoy!
