Welcome to Maldives

 
 

This recipe is dedicated to my husband Adnan, We travelled to Maldives for our honeymoon in 2018 & had the time of our lives.

This Sea-salt starter always takes us back to the beautiful Island of furanafushi.

 

Adnan my darling, I love you for all you are, all you have been & all you are yet to be.

 

INGREDIENTS

  • 225g Mozzarella pearls

  • 2 cups Green tomato/ any colourful tomatoes.

  • 2 Peaches

  • 2 Nectarines

  • 1/4 cup fresh pomegranate

  • 1/4 Fresh Cress

DRESSING

INSTRUCTIONS

  • Score the fresh tomato on its base & place in the microwave for 20-30 seconds.

This is an easy way to remove the skin

  • Combine the oil tomato and lemon juice in a blender & blend to form a light and foamy liquid. Strain the liquid, through a fine sieve, into a jar.

  • Add the olive oil, a pinch of sea salt & freshly ground black pepper & shake the jar to emulsify the oil.

  • Add the fresh fruit, tomatoes & mozzarella to a Salad bowl & drizzle the dressing. Toss to combine & garnish with fresh pomegranate & cress.

  • Season to taste with more sea salt and pepper if desired, and serve immediately.

This is the original Sea salt starter- they used green tomatoes instead of mixed cherry tomatoes.

Our honeymoon dinner amongst the baby sharks & stingrays that swam majestically below us.

 

Love is our greatest adventure.
