A light and crisp seasonal salad. Perfect for any occasion.
INGREDIENTS
30g French goats cheese
2 small beetroot, cut into wedges
1 cup rocket
1 orange
1 Tbsp Orange juice
4-5 mini yellow bell peppers
1 Toast
pinch of salt & freshly ground black pepper
2.5 Tbsp olive oil
1/4 Tsp oregano
1/4 Tsp Mustard
GARNISH
Garnish with herbed toast crumb
INSTRUCTIONS
In a small pan, over a medium- low heat, add 1 Tbsp olive oil and crumble in the toast. Toss in the oil & add the oregano, salt & freshly ground black pepper.
Set aside to cool.
Once cooled, crumble with a fork, or use a blender to make finer crumbs.
DRESSING
To make the dressing, mix together the mustard and olive oil orange juice, a pinch of salt & pepper.
ASSEMBLY
Plate your salad- start with the rocket, the dot around the goats cheese & beetroot.
Play with colour & composition. Add oranges & the herbed crumb and finish with a light placement of the dressing. The salad doesn't require much sauce because it gets it flavour from the sweet beetroot & the sharp cheese.
