A healthy, Low carb alternative to using lamb shoulder. So tasty- you wont care that its low carb!
INGREDIENTS
1/2 cup lamb shoulder, pre-cooked (see fragrant rice and roast lamb recipe)
Pinch of salt
2-3 cups baby leaf salad
1/4 cup feta cheese
1/4 cup pomegranate seed
small red onion
1 Tbsp oil
DRESSING
2 Tbsp pomegranate molasses
2 Tbsp balsamic vinegar
2 Tbsp olive oil
1/2 Tsp honey
pinch of salt
GARNISH
Dressed with side of mama's homemade hummus
Tzatziki
Fried red onion
Crispy dry fried onions
INSTRUCTIONS
In a small saucepan, over a medium heat- fry the thinly sliced onions in a little oil. Reserve fro plating later.
ASSEMBLY
Plate by laying a good amount of baby leaf salad, then top with the lamb (warm or cold as desired) and garnish with the feta, pomegranate & fried onions.
To add a real crunch, add a sprinkle of the pre-made fried onions.
Add a dollop of your favourite Tzatziki & mama's famous hummus.
Drizzle the dressing, serve & enjoy!
