Prawn & mushroom fettuccine

Serves 6

Creamy, flavourful mushroom Alfredo sauce, perfectly cooked king prawns on a bed of pasta... impress your date tonight!

 
 

INGREDIENTS

  • 500g Tagliatelle pasta

  • 200g king prawns

  • 1 Tbsp Olive oil

Alfredo Sauce

  • 200g button mushrooms, sliced

  • 1 medium onion, finely chopped

  • 300ml single cream

  • 1 cup milk

  • 2 magi stock cubes (vegetarian)

  • 1/4 Tsp freshly ground nutmeg

  • 1/4 Tsp white pepper

  • pinch of salt

  • 2 Tbsp butter

INSTRUCTIONS

  • Clean the mushrooms from any debris & finely slice.

  • Add the shallots and mushrooms to a large saucepan with 2 tablespoons of the butter. Sauté until the mushrooms are soft 8-10 minutes.

  • Heat the milk in a little saucepan & melt the veggie bouillon cubes.

  • To the cooked mushrooms, add the cream, milk mixture & spices.

  • Simmer over low heat.

  • Cook the tagliatelle in a large pot according to package directions. Drain, reserving a little bit of the water, and return to pan.

  • Add mushroom sauce to the tagliatelle, toss to coat.

  • Keep the pasta on very low heat.

  • To a medium egg pan, cook the prawns in a little oil. Add a pinch of salt & freshly ground black pepper. Set aside to serve.

  • Season with salt and pepper, add the prawns & a good grating of Parmesan cheese.
