This recipe uses fine shavings of courgette, lusciously dressed in an Alfredo sauce, with lightly spiced mushrooms & king prawns. So delicious, you won't miss the carbs!
INGREDIENTS
3 Large courgettes, shaved
200g king prawns
1 Tbsp Olive oil
Alfredo Sauce
200g button mushrooms, sliced
1 medium onion, finely chopped
300ml single cream
1 cup milk
2 magi stock cubes (vegetarian)
1/4 Tsp freshly ground nutmeg
1/4 Tsp white pepper
pinch of salt
2 Tbsp butter
1/4 Tsp garlic powder
INSTRUCTIONS
Clean the mushrooms from any debris & finely slice.
Add the shallots and mushrooms to a large saucepan with 1 tablespoons of the butter. Sauté until the mushrooms are soft 8-10 minutes.
Heat the milk in a little saucepan & melt the veggie bouillon cubes.
To the cooked mushrooms, add the cream, milk mixture & spices.
Simmer over low heat.
Place the courgette shavings in a small plate. Add a Tbsp butter & a pinch of garlic powder. Microwave for 1 minute. This will gently steam the courgettes.
Add mushroom sauce to the steamed courgettes, gently toss to coat.
To a medium egg pan, cook the prawns in a little oil. Add a pinch of salt & freshly ground black pepper. Set aside to serve.
Season with salt and pepper, add the prawns & a good grating of Parmesan cheese.
