INGREDIENTS
6 Tbsp Marscapone cheese
80g fresh cooked prawns, washed & strained.
60g smoked salmon
125g mozzarella cheese, strained from liquid
A hand full of fresh rocket
Pinch of salt & black pepper (try with @majd sea salt)
INSTRUCTIONS
Preheat oven to the highest setting.
Prepare the pizza dough, as recipe above. Set aside to rise (1 hr max).
Lightly dust the table with flour & knead the dough slightly. Divide into eight equal balls. (2 portions of the dough required for this recipe).
Cover the balls with a tea towel until ready to use.
Use your fingers, or a well floured rolling pin to flatten each ball into a flat, round bread, around 5mm thick.
Place the dough on a flat baking tray, lined with baking paper.
Using a pastry brush, work around the edges of the dough with Extra virgin olive oil, a sprinkle of oregano & a pinch of salt.
Add a few tablespoons of the marscapone cheese, a pinch of black pepper, the prawns & mozzarella cheese.
Cook in the oven until the base shakes off the paper.
Grill the top until the cheese melts.
Remove from the oven, place on a serving plate & add the smoked salmon, rocket & a drizzle of olive oil.
Garnish with fresh lime.
Serve hot & enjoy!
RECIPE NOTES
Any excess dough can be frozen in sandwich bags for use later. Just make sure to freeze in separate portions & thaw before use.
