INGREDIENTS
6 Tbsp Pizza salsa
80g Spinach
1 Tsp butter
1 garlic clove
60g goats cheese
125g mozzarella, grated
A hand full of fresh rocket
Pinch of salt & black pepper (try with @majd sea salt)
INSTRUCTIONS
Prepare the spinach
In a small pan, over a medium- low heat- add the butter, spinach and garlic. Mix well until the spinach wilts. Season with a little salt & black pepper.
Strain in a colander & set aside for use later.
Dough
Preheat oven to the highest setting.
Prepare the pizza dough, as recipe above. Set aside to rise (1 hr max).
Lightly dust the table with flour & knead the dough slightly. Divide into eight equal balls. (2 portions of the dough required for this recipe).
Cover the balls with a tea towel until ready to use.
Use your fingers, or a well floured rolling pin to flatten each ball into a flat, round bread, around 5mm thick.
Place the dough on a flat baking tray, lined with baking paper.
Using a pastry brush, work around the edges of the dough with Extra virgin olive oil, a sprinkle of oregano & a pinch of salt.
Add a few Tbsp of the pizza salsa & top with grated mozzarella. Dot around the spinach, caramelised onions & goats cheese.
Cook in the oven until the base shakes off the paper.
Grill the top until the cheese melts.
Remove from the oven, place on a serving plate & garnish with a little cress & a drizzle of olive oil.
Serve hot & enjoy!
RECIPE NOTES
Any excess dough can be frozen in sandwich bags for use later. Just make sure to freeze in separate portions & thaw before use.
